Yellow Cake


2 1/4 cup flour

1 1/2 cup sugar

3 1/2 teaspoons baking powder

1 teaspoon salt

in the large mixing bowl.

In a 2 cup measuring cup put:

1 1/4 cups milk

add enough vegetable oil to bring the liquid up to the 1 1/3 cup line.

Add the milk/oil and

1 stick of softened butter

and 1 teaspoon vanilla (or other flavoring)

to the flour mixture.

Beat on medium speed for 2 minutes.

Add two eggs and beat for another 2 minutes.

Bake at 250 for 25 min. or until toothpick comes clean

Makes two 9″ round cake pans
